"SOUFFLÉS.
People act like soufflés are magic. They're not magic. They're eggs, air, and anxiety.
The process: 1. Beat egg whites until stiff peaks form (do you know what stiff peaks look like? No, you don't, nobody does, everyone's guessing) 2. Fold gently (how gently? GENTLY. Not vigorously. Not lazily. GENTLY. Figure it out) 3. Bake immediately (not in 5 minutes, not after you check Instagram, NOW) 4. Don't open the oven door (I don't care if it's been 2 minutes and you want to peek, DON'T) 5. Watch it rise and feel briefly powerful 6. Remove at the exact right moment (which is different for every oven and also unknowable) 7. Serve immediately before it deflates (it will deflate, they always do, life is suffering)
And that's a soufflé. Eggs, air, anxiety, suffering. You're welcome."
